Hi Did you miss me? Spinal surgery, flat pie and rice pudding!




      Well it's been a long time, various reasons for that.

                 Mostly health and I am sorry for not being here to keep you up to date.

          Most recent was spinal surgery in June 2015, on the lumbar 2/3 joint, a decompression with a bone graft to hold it apart. The joint had collapsed completely and was causing agony as it pressed down heavily on a nerve. Most strange was the pain felt as if it was largely in my legs because that is where that nerve carried messages from. It felt like a constant electric shock which got worse if I moved at all.

 Of course because I live in a first floor apartment (second floor in the US) and wouldn't part with Tich, life became an agonising ordeal, 5 times a day taking her over the road to the park. This was from winter solstice 2014 run up until the surgery in June.

 


 I unfortunately did not record the surgery or my hospital stay and these are the only photos I have. These were taken when I went for the staples out, some 6 weeks later.


      Taken on my new phone, a Moto E which I have very recently upgraded to Android 5.1, a considerable improvement on earlier OS Many thanks to my daughters who gave it to me as a Christmas prezzie last year. The old nokia had been knacked for ages and I was reduced to a very old school nokia that was only any good for phone and text. Many thanks to them also for the help they have given me this year, when I have been broken and in pain, at my most helpless and vulnerable. 
                    They each know what they have done for me.
 



      
                     Surgery was in Ipswich hospital, Suffolk and my surgeon Mr Lovell did an excellent job. I cannot thank him enough.
     Also the anesthetist, the nurses and all the medical staff that looked after me so well during my stay and since.




            Unfortunately because of my previous cardiac problems I was high risk and he would only keep me under long enough to deal with the one joint. It was faraway the worst but unfortunately not the only problem joint. 


   I have had spinal problems for years and these were all exacerbated at the same time as I overdid things in the run up to the holiday season last year.
         This year I am taking it very easy, not only because I am still in a lot of pain and on very heavy painkillers, as well as using sticks to get about. I can feel that at least a couple more joints are only one foolish movement away from collapsing completely like the 2/3 did.

       I definitely am not risking that again


        Food wise I can't really remember what I have been making. I did get an ice cream maker earlier in the year and got the hang enough to make some cracking ice cream before the pain got too bad.
     Lemon and ginger was my favourite.
                   Unfortunately I don't remember if I took photos or wrote the recipe down, pain and painkillers will do that to your memory.


I have got myself down to a bit of a food routine now, to minimise the difficulty of cooking and associated pain. At the moment I am living on flat pie for dinner with a rice pudding for afters.
                                                   
 
                         Flat Pie

This is flat pie, my veggie version of 
cottage pie for people who live in flats. Minimum preparation because the veg are all frozen or tinned. I took these photos today, although I cooked the pie yesterday, so it isn't looking it's best.  

 Simple recipe, whatever you have available varying around pulses and veg. This has red kidney beans, chickpeas, washed dry green lentils, carrots, green beans, peas, diced onion. All into the dish, mixed up and leveled out. 

     In a measuring jug, to 2 tins of chopped tomatoes add 1 tsp garam masala, 1 tsp turmeric, good shake of chili flakes (vary to your taste) mix well. Pour across the top of the veg and spread out level with the back of a fork.

       For the top, rinse 2 large tins of potatoes and put in large jug, add some milk then with a hand blender turn into creamed potato. Stir in some grated cheese             
         Spread out flat across the top of the pie and sprinkle liberally with more grated cheese before putting in the oven. About 40 minutes on a low shelf at 200C, keeping an eye on it. I put it in underneath the rice pudding and cook both together.

           For this pie I tried 2 top layers, one using 1 tin of potatoes, the other with some shop bought pre-prepared carrot and swede mash. Turned out nicely.

             Makes 6 good portions although I haven't yet divided it into storage tubs and put into the fridge freezer. Reheat thoroughly before eating. I find it goes well served up with baked beans.



           Coconut Rice Pudding. 

I prepare this and serve up with the dish on the oven shelf to avoid having to lift heavy weights


  300g arborio  risotto rice, 70g sugar, good shake of nutmeg to taste. 1.5 litres of semi-skimmed milk, 0.5 litres of coconut cream/milk I am using solid block creamed coconut which is mixed up with boiling water

Put all the ingredients in the dish and mix thoroughly. Put the lid on and put in the oven on an upper mid shelf at 200C for about 30 minutes or until the milk is starting to simmer. Take the lid off, stir thoroughly again and shake more nutmeg across the top to taste. Cook for another 40 minutes. Serve hot and still milky, with fruit if you like it.

    Replace top of dish and return to the cooling oven. You will find it like this when it is cold which gives you a variety of serving options. Add milk and mix the serve hot and cold, reheat with the portion of pie and reserve for desert (saves power) or just cut a slice and eat like cake.  
   A few test runs will get it just the way you like it.

        This also makes 6 good portions which should be divided and stored in the fridge or freezer, although you can see that my first portion of rice pudding was considerably larger than my first portion of flat pie. It is very moreish. I find the risotto rice makes a creamier pudding than plain pudding rice. They are both round, short grained rice and the recipe works just as well with pudding rice but timings may need to vary

     Well there you have it. 2 simple recipes that will feed you for most of the week. They both cook at the same temperature and can be cooked together. I get the rice pudding in for the first cooking stage then prep the flat pie. Move onto stage 2 cooking and slide the flat pie in beneath it. When the pie is ready, the pudding can be taken out at the same time, and kept out while the oven cools if you like. It all depends how thick you like it.

Pa’s Delicious Home Made Butter Bean Tropicale Recipe




040820131054    Here we are back again and today I am making a recipe using what in Great Britain is the most bland and boring of legumes … the Butter Bean. It was a bane of my life in kidhood when it was always served boiled within an inch of it’s life in a sad pile on the edge of the plate.
    Well none of that today, this recipe is a triumph of the butter bean and raises it to take it’s rightful place in the glorious pantheon of pulses.
    In My Humble Opinion and I hope yours too.

Pa's Hospital Food Experience



Pa's Vegetarian Gluten-free Hospital Food

Hi and welcome back to Pa's world.

Today i am coming to you from the Colchester General Hospital, Essex, England. Part of our wonderful NHS.

I had a small heart attack Sunday after a high stress situation and have been looked after since on the cardiac ward where the staff have been great. I had an angiogram yesterday which showed the arterial stents i had 3 years ago were clean as a whistle.
Healthy eating really is good for you.

I am trying this post through my Nokia x6 smartphone which i have only just discovered may be capable.
I don't know how it will come out so please bear with me :-)

Pa’s Easy Ginger Chickpeas with Salad of the Week 1

    This is the salad riposte to those who complain that salad is bland and boring With only 4 ingredients this salad bites back.
    My little chickpea treat can be served warm or cold so both are ideal if you need to prepare in advance.

Pa’s vegetarian ideas for summer parties, buffets and barbeques




Well hi and welcome to summer!
     Today I have just popped in a few great ideas from other other people, because not everything I do can always be original ☺☺
So here you are, if you are hosting a party this summer or going to one. If you are a vegetarian or have guests that are.
Or if you just like healthy tasty food here are some bright ideas to liven up your table.

A nice colourful salad to brighten up the table, a busy recipe but could be simplified and modified to suit individual tastes 
                                
 ingredients
3 cups Romaine leaves, torn into bite-sized pieces
1 Red Bell Pepper, chopped into small pieces
1 Avocado, sliced into small pieces
3-4 dried Figs, cut into small pieces
1 Large Tomato, chopped
1/4 Red Onion, minced
1 tbs Extra Virgin Olive Oil
3-4 Large Mushrooms, chopped
Juice from ½ a Lime
2 tbs Pine nuts
3-4 Black Olives, chopped
small bunch fresh Cilantro, chopped
1 cup cooked Black Beans
Hot Sauce, to taste
1/2-3/4 cup Corn Kernels (Fresh off the cob or frozen and thawed)

5 cups watermelon - 1/2 medium sized melon
1 cucumber
1 pint cherry tomatoes
1 lime

Pa’s Home Made Gluten-Free Bread



    Welcome back to Pa’s pages, today I am making a gluten free loaf for the first time Open-mouthed smile so let’s see how that goes.
    First I need to let you know that due to spondylitis in the spine, I have limited manual dexterity and low energy thresholds. 

     So I will introduce my first cheat who’s energy and enthusiasm has helped me with most of the food preparation on these pages.
    Take a bow La belle Moddelline Ninja my little food ninja without whom none of this would be possible and many thanks for your invaluable help.

    My second cheat is that I am once again using Dove gluten free flour. On the packet Dove unfortunately do not give a bread recipe.
    I did also use Allinsons fast action yeast which has a bread recipe on the container and I adapted that. 

    So this is a simple recipe, indeed all bread recipes are pretty simple it is just getting a workable dough, kneading it then leaving it to rise. Normally the dough is allowed to rise twice with a kneading in the middle and here is the anomaly with gluten free bread.

    The main function of kneading with normal bread mixes is to work the gluten which gives the dough it’s elasticity and cohesion.
    That obviously is not the case with gluten free bread. Here we need to get the cohesion and limited elasticity from the right mix of ingredients and the kneading is more for the purpose of getting plenty of oxygen into the dough to allow the yeast to work.

    The Allinsons recipe and yeast only asks for one kneading and rise before the oven so that does suit gluten free flour.



So on with the recipe;-

    Ingredients


  •     500g    Doves gluten free flour
  •     25g      modified maize starch
  •     10g      Allinson easy bake yeast
  •     15g      sugar
  •     15g      sunflower spread
  •     3         medium sized free range eggs at room temperature
  •     150ml  warm water 

    Method

 

    Now this is where we realise how simple this recipe is and just how slack I was as La belle Moddelline did  all the hard work and I just supervised

    So mix all the dry ingredients together in a large bowl,
    Separately beat the eggs then mix  them thoroughly into the dry mix.
    
    Add water a little at a time until you get a workable dough, remembering that this flour is funny stuff to work with and you can easily over wet the dough. If this happens put plenty of flour on your kneading surface and work it in until you get the correct  consistency. You will know this, when as you knead with the heel of your hand the dough doesn’t tear.

    Water and flour can be added in small quantities until it is correct but always remember to work the dough thoroughly after each addition to see the full effect.

    Now as we are trying to get as much air/oxygen into the dough as possible, repeatedly folding as you knead with the heel of your hand, rotating the dough so that  all of it is thoroughly worked.
    15 minutes of kneading when you have your dough should be plenty, then lightly grease your loaf tin, mould your dough into a loaf shape that fits, put in tin and cover with a clean cloth.

Put somewhere warm and draft free and leave for 1 hour to rise.
    
    Pre-heat the oven to 230o C  and place the loaf gently on a high middle shelf.
    Cook for 15 minutes then reduce the temperature to 200o C and cook for another 20 – 30 minutes until the rise is well set.

    Remember that this flour does not brown like wheat flour so don’t wait for the same colour but take the loaf out of the oven, tip from the tin and  tap on the base with a knuckle. It should sound hollow, if not put back in the oven and test again after 5 –10 minutes until happy.

    Remember the loaf and tin are hot! So use an oven glove or tea towel when handling them.
    


A loaf fresh out of the oven is a wondrous thing. The aroma is lovely and so tempting to try.

Try and control yourself and allow it to cool on a wire rack but do try a slice while it is still warm.   A slice with butter or your usual spread is a treat.

 A slice with a little Brie cheese and black pepper accompanied by a drop of the house red for myself and La belle Moddelline finished the bake in style.




    

    

    Well that bake was a success the bread was good and tasty and it sliced well. My only reservation was that it could have been a little lighter, next time I will try a little more kneading and a longer rise time but all in all I am very happy with it.

    Here are a few more pictures I have found that I thought I would share with you lucky people.

Christmas Cake 2012

   



    My best looking Christmas cake so far, 
not as boozy as previous years 
but with a tidy decoration 
even if the trees are well past their best.











     

    This is my vegetarian version of a Gala Pie, not my best filling, 
    I forgot to put in the fresh herbs  and garlic DOH! 
    Then broke the jug on the blender poking things down with a wooden spoon while it was blending DOH!
    Fair to say I was in a rush and not focused.



Celebration Pie
    My best pastry yet though, a very rich hot water pastry variation, as used in pork pies, gala pies etc. but I used butter and milk instead of lard and water, otherwise the method is the same.
    Very tasty pie thank you very much I look forward to seeing if I can manage a gluten free version of this pastry.
    
    Keep an eye on Gluten Free Pa or Pa Goes Gluten Free, still not sure how these titles work in a search. It will be labelled as Gluten Free Vegetarian Celebration Pie if I can pull it off.
    Can't find a picture of my Biff Wellington, a vegetarian version of Beef Wellington that is a real treat. 
    Again keep an eye out around Christmas time, when I will be trying for a Gluten Free version.
    If I can pull them off I will be posting the recipes, if I remember to write them down. My daughters keep cussing me for cooking good food without keeping a record of how I did it.
   I do a very nice Perky Pie as well, completely pork free but not such a rich pastry, just a straight vegetarian hot water pastry.
    Again, I will try to write down and share the recipe next time I bake them.
    Unfortunately I have too many PA!!! moments nowadays. 




    A very simple cake/biscuit recipe baked in the same tray as my tray bake dinners, you know it makes sense.
   
Blueberry and Cinnamon tray cake

     I can't remember the recipe, although it is bound to have Cinnamon because I put it in nearly everything sweet I cook, one of my very favourite spices.
    Cinnamon is for life not just for Christmas ho ho ho.
    Also contains Blueberries from the look of it and probably also Sultanas because I put them in most dishes, sweet and savoury.
    I CAN'T HELP IT!!!!!!





Chocolate Birthday cake




   

  Nothing much to say about this, a tasty chocolate cake with "rustique" decoration. 







    


    My one and only pumpkin pie.

        A difficult ingredient to work with because it isn't actually a very nice taste. 
    At least English pumpkins aren't, they are grown mainly for making Halloween pumpkin heads not eating.




Pumpkin Pie

    I think in the USA they grow sweet pumpkins for eating and carving pumpkins for heads which may be why they like Pumpkin Pie so much. 
    I may be completely mistaken about that though and if an American who knows about these things should read this, please let me know.
    
    I did find that it was very difficult to get people to try a slice because they had eaten bad pumpkin pies in the past.
    I can understand this because I didn't find it very appetising to start with and I used a lot of different spices to get a flavour I enjoyed. 
    When people were persuaded to try a slice they were pleasantly surprised that it tasted nothing like Pumpkin Pies they had known previously.
    So a result there.
    
    I cannot remember what the white bits on the top are but I am sure that they were an ABSOLUTELY BRILLIANT addition and gave it that certain Je ne sais quoi essential at Halloween.
      

    Well that is it for this set of pictures, sorry I don't have the recipes to go with them, that was sort of the point of starting this blog but I went off on a tangent about my diet and still forgot to write the recipes down.
    
    I will try to do better in the future both on here and Pa Goes Gluten Free, my new blog devoted to guess what? Gluten Free baking, so this one may become more the realm of preserves and other interesting cooking and food related posts.
    
    I did make some delicious spiced fruit and spirits drinks last Christmas as well as some nice lightly spiced fruit jams. 
    Plus an Indian version of Branston pickle and some nice pickled fruit and vegetables. Well I liked them although they met with mixed reactions from the  younger generation who don't seem to be Pickle People.
    All in all I have been busy with just what this blog needed but have kept no record and haven't posted. 
DOH!
    
    Now I have started a Gluten Free blog (yes I realise I have already mentioned it) to run alongside this one but instead of posting on there I am back with Pa's Pies and Preserves, yes it is another quality PA!!! moment.

    Well that is all for now folks, should anyone even read this.
    So remember people, love what you eat and eat what you love but keep it vegetarian.
