Pa’s Home Baked Gluten Free Biscuits - Blueberry Hearts, truly delicious

    With all the wholesome goodness I have been cooking and eating lately I really felt the need for just some tasty biscuits to go with my cup of tea and these fit the bill just right. Working with gluten free flour again and that means you really have to pack flavour in.
    So that is what I have done and now I share my step by step recipe with you. It is very simple so please join me Winking smile

Pa’s vegetarian ideas for summer parties, buffets and barbeques




Well hi and welcome to summer!
     Today I have just popped in a few great ideas from other other people, because not everything I do can always be original ☺☺
So here you are, if you are hosting a party this summer or going to one. If you are a vegetarian or have guests that are.
Or if you just like healthy tasty food here are some bright ideas to liven up your table.
 
 
 
 
    Simple fruit sticks and is that cheese I spy at the bottom?
    If not why not?
    Whichever fruit and cheese rocks your world make this a sophisticated, modern version of the old cheese and pineapple.

Fruit, nuts, cheese, seeds and green leaves of your choice with an option of your favourite home-made dressing.
 
 
 

  
 
 
 
 
        A great idea here for fruit skewers, adapt it with your favourite fruits or just what you have to hand.

    A light dusting of cinnamon or ginger or another of your favourite spices might just give it that little extra something.
 
 
 
 
 
 
 
 
 
 
 
 
 




 
 
A nice colourful salad to brighten up the table, a busy recipe but could be simplified and modified to suit individual tastes 
                                
 ingredients
3 cups Romaine leaves, torn into bite-sized pieces
1 Red Bell Pepper, chopped into small pieces
1 Avocado, sliced into small pieces
3-4 dried Figs, cut into small pieces
1 Large Tomato, chopped
1/4 Red Onion, minced
1 tbs Extra Virgin Olive Oil
3-4 Large Mushrooms, chopped
Juice from ½ a Lime
2 tbs Pine nuts
3-4 Black Olives, chopped
small bunch fresh Cilantro, chopped
1 cup cooked Black Beans
Hot Sauce, to taste
1/2-3/4 cup Corn Kernels (Fresh off the cob or frozen and thawed)

Ingredients
5 cups watermelon - 1/2 medium sized melon
1 cucumber
1 pint cherry tomatoes
1 lime
2 tbsp chopped mint leaves

My Vegetarian Diet Day 2 25/06/12


   Well what a day, possibly had too much coffee because one unpleasant incident sent me a little manic and threw out my mental equilibrium. Thank goodness for Jacky with tea and cake to calm me down :-)

   Did manage to maintain the diet reasonably i think.

Breakfast

1       Banana
100g Low fat natural yoghurt
2       Mugs of coffee with milk

Brunch :-)

1       Mug of coffee with milk

Lunch

1       Banana
200g Low fat natural yoghurt 
1       Mug of coffee

Restorative

1       Mug of tea

Afternoon Tea

1       Piece of Jacky's home made choc-chip and
         ginger cake, very nice too :-)
2       Cups of tea

Tea

1       Banana
6       Blueberries
2       Pints of sparkling water

Dinner

                         Egg and 3+ veg



2       Medium eggs fried in
2       Spoons of sunflower oil
222g Red potato (romeo) in skin, microwaved
250g Prepared mixed veg (carrot, butternut squash,
         peas,green beans), microwaved.
92g   Red onion, microwaved
8g     Brown sauce (Water, Tomato puree from 
         concentrate, Sugar, Barley malt vinegar, Spirit
         vinegar, Date puree [Dates, Water, Acetic
         acid], Cane molasses, Modified maize starch, 
         Salt, Acetic acid, Rye flour, Soy sauce (Water,
         Salt, Sugar, Soya beans,Wheat, Acetic acid],
         Ground mixed spice, Barley malt extract,
         Ground black pepper, Onion powder, Ground
         cloves]


1.5    Pints of sparkling water
1       Pint of cider


Supper

1       Small banana 
10g   Brie cheese
1       Mug of tea with milk 
  


   Well that was the lot and looking back there was a little more than i thought, hmmm, all quite healthy though a little heavy on the microwave. getting lazy. 

   I must say keeping this together is more time consuming than i thought ;-)

Introduction

Hi and welcome to my blog a whole new world for me and you!

I hope to share my thoughts and ideas on vegetarian food, cookery, and  food related  interests PLUS

This is my first attempt at blogging and getting this far has exhausted me so i leave you with a picture and recipe for c c c c cookies, my latest attempt at baking bikkies and fully intend to be back with you regularly.

As you can see they are slightly overdone, not the most auspicious start to my blog. Unfortunately, i was pleasantly interrupted just as i thought they could do with a few more minutes and lost track.

                             C C C C Cookies   makes @ 36 


               Ingredients

600g Flour  (for these cookies i used gram flour to please a
                    coeliac  friend, the result was pleasantly
                    interesting but a little stodgy. Wheat flour works
                    as well)

50g   Sugar

100g Golden Syrup 

300g Sunflower Oil

100g Dessicated Coconut

50g   Sultanas    (blueberries, if available, are great) 

50g   Root Ginger   (peeled, chopped into 3-4mm cubes)

50ml Water

2 tsp Ground Cumin

1 tsp Ground Coriander

1 tsp Ground Cinnamon

1 tsp Salt

2 tsp Baking Powder

2       Free Range Eggs 

Extra plate of dessicated coconut

              Method

First preheat fan oven to 200C (adjust to your own oven) 

Add oil syrup and sugar to a heat proof bowl and mix. At this point heating really helps the mixing, i pop in the microwave on full blast for a few minutes. Take out and mix. Stand to one side.

Add baking powder to water and stir.

Sieve flour into mixing bowl
Add spices and mix.
Add coconut, ginger and sultanas and mix thoroughly.

Beat eggs together in mug.

Add baking powder mix to flour mix,
Stir up oil, mix well, add to flour mix, mix thoroughly.
Add beaten egg mix to the rest and really mix it up.

Line your baking tray with foil to save on washing up. 


Wash your hands!


Take out @ walnut sized piece of dough/batter, mould, flatten slightly and drop into plate of coconut. then place on baking tray, coconut side up, @ 1-2 inches apart.


At this stages they will seem to be quite oily, don't worry about it.


Put baking tray in top half of oven for 12-15 minutes. 
Keep an eye as nearing end, may need extra few minutes but they always seem darker at the bottom than top.


When you are happy remove from oven and put cookies on wire rack to cool.


Enjoy warm or cold.


These are low in added sugars but with plenty of natural sugar in coconut and sultanas but the flavour is aromatic and spicy.
