Pa’s Home Made Gluten-Free Bread



    Welcome back to Pa’s pages, today I am making a gluten free loaf for the first time Open-mouthed smile so let’s see how that goes.
    First I need to let you know that due to spondylitis in the spine, I have limited manual dexterity and low energy thresholds. 

     So I will introduce my first cheat who’s energy and enthusiasm has helped me with most of the food preparation on these pages.
    Take a bow La belle Moddelline Ninja my little food ninja without whom none of this would be possible and many thanks for your invaluable help.

    My second cheat is that I am once again using Dove gluten free flour. On the packet Dove unfortunately do not give a bread recipe.
    I did also use Allinsons fast action yeast which has a bread recipe on the container and I adapted that. 

    So this is a simple recipe, indeed all bread recipes are pretty simple it is just getting a workable dough, kneading it then leaving it to rise. Normally the dough is allowed to rise twice with a kneading in the middle and here is the anomaly with gluten free bread.

    The main function of kneading with normal bread mixes is to work the gluten which gives the dough it’s elasticity and cohesion.
    That obviously is not the case with gluten free bread. Here we need to get the cohesion and limited elasticity from the right mix of ingredients and the kneading is more for the purpose of getting plenty of oxygen into the dough to allow the yeast to work.

    The Allinsons recipe and yeast only asks for one kneading and rise before the oven so that does suit gluten free flour.



So on with the recipe;-

    Ingredients


  •     500g    Doves gluten free flour
  •     25g      modified maize starch
  •     10g      Allinson easy bake yeast
  •     15g      sugar
  •     15g      sunflower spread
  •     3         medium sized free range eggs at room temperature
  •     150ml  warm water 

    Method

 

    Now this is where we realise how simple this recipe is and just how slack I was as La belle Moddelline did  all the hard work and I just supervised

    So mix all the dry ingredients together in a large bowl,
    Separately beat the eggs then mix  them thoroughly into the dry mix.
    
    Add water a little at a time until you get a workable dough, remembering that this flour is funny stuff to work with and you can easily over wet the dough. If this happens put plenty of flour on your kneading surface and work it in until you get the correct  consistency. You will know this, when as you knead with the heel of your hand the dough doesn’t tear.

    Water and flour can be added in small quantities until it is correct but always remember to work the dough thoroughly after each addition to see the full effect.

    Now as we are trying to get as much air/oxygen into the dough as possible, repeatedly folding as you knead with the heel of your hand, rotating the dough so that  all of it is thoroughly worked.
    15 minutes of kneading when you have your dough should be plenty, then lightly grease your loaf tin, mould your dough into a loaf shape that fits, put in tin and cover with a clean cloth.

Put somewhere warm and draft free and leave for 1 hour to rise.
    
    Pre-heat the oven to 230o C  and place the loaf gently on a high middle shelf.
    Cook for 15 minutes then reduce the temperature to 200o C and cook for another 20 – 30 minutes until the rise is well set.

    Remember that this flour does not brown like wheat flour so don’t wait for the same colour but take the loaf out of the oven, tip from the tin and  tap on the base with a knuckle. It should sound hollow, if not put back in the oven and test again after 5 –10 minutes until happy.

    Remember the loaf and tin are hot! So use an oven glove or tea towel when handling them.

Try and control yourself and allow it to cool on a wire rack but do try a slice while it is still warm.   A slice with butter or your usual spread is a treat.

 A slice with a little Brie cheese and black pepper accompanied by a drop of the house red for myself and La belle Moddelline finished the bake in style.




    

    

    Well that bake was a success the bread was good and tasty and it sliced well. My only reservation was that it could have been a little lighter, next time I will try a little more kneading and a longer rise time but all in all I am very happy with it.

    Hi been a long time and as you might have noticed I have gone gluten free and started a new gluten free blog.
    So I am just uploading collected pictures of baking since we last spoke to tidy up so to speak.

    Here is a short selection of my diet as it was, in July 2012 if I am reading the mobile date correctly.
    Doesn't it look healthy and fairly minimal gluten by coincidence.
    As a matter of interest, if anyone is interested, I have gone down from 95k to 85k now. That is weight, not salary unfortunately.
    So here is some good looking tray bakes and other snacks. I will leave out the plates of egg, chips and beans and bars of chocolate that interrupted my perfect diet hee hee.

I'm going to have to practice my bread making to get a good gluten-free sandwich loaf.

my vegetarian diet day ? 16/07/12



  Breakfast

      Banana

  Lunch

      2 brie with chilli, tomato, onion on wholemeal    
      bread sandwiches.

  Dinner
       
      2 slices of honeydew melon

      Traybake:- potato, sweet potato, mushroom,
      onion, sweet pepper. Salt and pepper to taste.

  Supper

      Valencia oranges 


  Drinks

      Coffee, tea, water.


      This is a quick one just to keep up, new fast
      format :-)
      Wow super healthy, low volume, bet i'm starving
      in the middle of the night :-D

My Vegetarian Diet Day 6 29/0612


   Well here we are again, struggling to make this blog a daily routine but keeping a written log in the notebook, so.
    Been a funny sort of weekend, ha ha but now i will find out how i stuck to a weight reducing diet ha ha. I write it down but don't remember it.
   Ok we're off

Breakfast

   1       Banana
   2       Mugs of coffee , black. ( that's what i get for
            yesterdays slurps of milk!)

Elevensies

   100g Yoghurt
   3       Blueberries
   1       Banana
   1       Mug of coffee, black

Lunch, late

   2.5    Cheese oat thins, (thank you Jacky), helped 
            by Tich (the other 0.5)

Afternoon tea

   66g   Brown roll
   21g   Brie cheese
   13g   Watercress
   1       Mug of tea, with milk
   75g   Beetroot
   1       Small banana

Dinner

                           Mixed veg stir fry
                 
   20g   Sunflower oil
   264g Mixed vegetables, ready prepared (Cabbage
            40%, mushrooms 20%, beansprouts 20%,
            carrots 20%)
   1g     Fresh mint, (thank you community gardens)
   30g   Sultanas
   140g Fresh free range noodles (as before)
   1      Sprinkle of salt.
   1      Watercress garnish

   426g Total cooked weight  

   1       Mug of tea, with milk

Supper

   1      Mug of tea, with milk
   2      Slurps of milk
   10g  Brie cheese

   Well i seem to eat quite a lot throughout the day but mostly pretty healthy so far.

My Vegetarian Diet Day 5 28/06/12

   Well yesterdays kerfuffle needed sorting out, which involved dashing into town early, threw my schedule right out and involved a lot of walking, exhausted me and needed a lay down in afternoon then early dinner.

Breakfast

   Mug of coffee with milk

Brunch

   1       Small banana 
   1       Pint of water
   300g Yoghurt

Lunch

   220g  Baked beans (as before) eaten from tin with
   20g    Brie

Dinner

                              Noodle stir fry

                    
   1 dsp Sunflower oil
   22g    Sultanas
   111g  Free range egg noodles (as before)
   pinch Cumin
   pinch Salt
   Mug of tea with milk

Supper

   15g    Brie cheese
   200g  Yoghurt
   3        Blueberries
   handful of sultanas  (sorry, unscientific dietific)
   Mug of tea with milk

Evening

   Pint of water
   Mug of tea with milk

Midnight feast

   104g  Beetroot
   35g    Brie cheese
   Mug of tea with milk 


   
   Looks like i am eating a lot of Brie, the only easy munchy in the fridge, will have to think about that.
   Yes, there are a lot of noodles in my diet, I hope that is a good thing. I am trying to cut out bread products as my main carb. Noodles and potatos are replacing, though i have now finished that bag of spuds. Don't normally buy reds but have enjoyed them and they haven't sprouted as quickly as whites normally do.
   Would type more but i am involved in a long winded and irritating internet 'chat' with my mobile phone providers. Wishing I hadn't had so much coffee today. Grrr.

My Vegetarian Diet Day 4 27/06/12



   Well this turned out to be a busy day, involving quite a lot of walking and finishing with a right old palaver. One important point was weighing myself at the doctors, 95 kilo, so i will adopt that as my base starting weight and my doctors scales as my reference. I don't have scales at home but do attend the doctors fairly regularly so can always hop on there. I don't want to be checking myself every day but i would like to get down to about 75 kilo, so i have a long way to go.


Breakfast

   Slurp of milk
   1 Small banana
   Mug of coffee with milk

11.20am

   1 Small banana
   Mug of coffee with milk
   6 Blueberries

12.10pm

   1/2 Pint of water

02.00pm

   Mug of tea with milk

04.45pm

   1 Fairy cake, with soft icing and walnut, for charity

06.00pm

   Mug of tea with milk
   200 ml  Home made yoghurt   

07.00pm  Dinner

                          Eggs, spud and beans



     154g   Red potato (romeo), boiled
   202g   Baked beans (Navy beans 51%, Water,    
              Tomato puree 4.5%, Sugar, Modified Maize
              Starch, Salt, Natural flavouring, Onion 
              powder, paprika), microwaved
   10g     3 cloves of garlic added to baked beans
   91g     Red onion, microwaved
   2         Medium free range eggs, fried, curried in
   2dsp   Sunflower oil

   479g   Total cooked weight
   15g     Brown sauce (as before)

   11/2   Pints of cider

Evening

   Well that was a busy day but seem to be getting on top of the coffee and when i had a palaver didn't scream, well, only by text.
   Got a weight now and a target to reduce to, and writing this, keeping my food log, is making me really aware of what i am eating.
   Good, and bad, i don't casually buy munchies, not keeping any in the house, apart from fruit and yoghurt but am starting to get cravings.
   Still little treats can come, must remember it's only 3 days since my footy binge.
   Goodness though, i could really trash a pack of bikkies right now.

   Well, here i am again, day 3 although i am 2 days behind in actually posting this. You know how it is, 1 thing and another :-) so will try and keep this simple and catch up.
  You may notice i have started noting slurps of milk, something that is a terrible habit of mine but one of which i am now recognising.

Breakfast

   Slurp of milk
   Mug of coffee with milk
   Small banana

Brunch :-)

   Slurp of milk
   Pint of water
   Mug of tea with milk   

Afternnoon Tea with Jacky

   Banana sandwich (nice granary bread)
   1   Digestive biscuit
   2   cups of tea with milk

   Mug of tea with milk
   Slurp of milk

Dinner
                 Noodle stir fry  

   
   25g    Sunflower oil
   26g    Frozen fresh mint
   155g  Mushrooms
   48g    Peas
   59g    Sweet red peppers
   95g    Noodles (as before)
   2        Cloves of garlic 
   22g    Watercress (fresh as garnish)
